Hi BattleBoy,
You can change the page size by going to File then Page Format.
You then change the Custom Size (in points) to as follows: Width - 504 Height - 756
Because: 7 inch = 504 (computer) 10.5 inch = 756 point (computer)
Margins: Generally, leave as default: if need to change for certain reason, use the conversion URL below.

As for LZW compression, that is described here: http://en.wikipedia.org/wiki/Tagged_Image_File_Format

I believe this is used when exporting TIFF files.
